Happy Memorial Day!
I won't keep you long since many of us have the day off to recognize, remember, and salute the men and women who have and continue to serve our country. But, as we prep for our BBQs about to occur this afternoon, I thought I would share a different salsa for your get-together. Not only can this be eaten as is (please disregard the discrepancy in the amount during prep and when it was served - ha!), but it is fantastic with grilled fish or chicken.
The salsa came about after I bought a ton of fruit with the intention of making several rolls of Fruit Sushi and Nigiri. When the sushi didn't go exactly like I envisioned in my head, I had to switch directions. Whatever the dish, there is nothing better than fresh fruit on a warm day. And, fresh papaya is a wonderful way to start.

Papaya and Pineapple Salsa
1 cup fresh pineapple, diced
¼ tsp salt
1 cup fresh ripe papaya, diced
1 shallot; diced (optional) *
1 jalapeno, seeded & minced (optional)
1 lime; juice only
2 Tbsp. dill, chopped **
Freshly ground pepper
Place the pineapple chunks in a colander/strainer, toss with the salt, and drain for about 10-15. Shake to remove/discard additional juice. Combine all ingredients and mix well (in a glass bowl). Set aside at room temperature for at least 3o minutes to marry the flavors. Serve with fish. Serves 2-4 (depending on hunger levels)
*Red onion is another option - I just prefer shallots.
**Cilantro will work fabulously with this as well...I just didn't have any.

Happy Memorial Day! This salsa looks absolutely delicious! A perfect way to celebrate a long weekend, for sure. What wonderful, summery flavors you've got going on!
