Simple Feta Salad

First, let me show you why I try not to walk into stores.




I am in charge of the desserts for a friends get-together in January. Freaking out a bit about the presentation, I went to my favorite restaurant supply store. I didn't find any display items I wanted (or could afford), but I did find packs of tart molds (25/$6.50), spatulas and sheet pans. I have several of these sheet pans already, simply because they are fabulous, but the two new shiny ones are a great addition to my stash. The spatulas? At $2.00 a pop, who couldn't use one of these babies that could scoop up a whole bunch of cookies at one time! My big purchase? $30.00. How excited was I?



As far as my lunch? Were you suddenly awaken this morning with a frightening start? Sorry about that. I am afraid that was me screaming from my bathroom scale. I have gained a whopping 13 pounds since August. Yes, you heard me correct - 13! So, its on now...I have to be able to fit into the suits I bought last year.



My ankle is still messed up, but in the meantime, I am going back to a vegetable-rich diet. (And referencing Kalyn's site for S. Beach recipe ideas) And to begin that charge, one of my favorite lunches is a feta, green pepper, and tomato salad - no dressing. The feta, I find, has enough flavor. Its yummy! So, that's what I am consuming for lunch this week...simple, but oh, so good!

Ah, dear Chris, now you know why I don't bake sweets. I find them irresistible, and then I get on the scale. Ouch!!!!!

But your salad looks great! And you can even use dressing on it if you want - that's not what puts the pounds on. South Beach is great way to lose weight. That plus getting at least a good walk in. But for that, your ankle needs to feel up to it.

If it isn't another thing, it's one thing. ;-)

Thanks Toni! I actually don't eat so much of the baked sweets...its the candy! :) Bad - bad - I know! And, would you believe I actually like the salad without the salad with dressing! :) I know, I am weird.

Woah now! Those aren't tart molds, they're brioche molds! Fear not, you can still make some fine looking tarts in those. :)

Do you think you could send me a pack of 25? I'll pay you triple plus shipping. Help a fellow daring baker out? (those molds usually go for MUCH more than that around here)
