Mele Cotte/Baked Apples

Since this blog is named after this lovely & scrumptious dessert, it would be nice to include the recipe. Thanks for reminding me Mrs. K!

Mangiamo! Let's Eat!

Mele Cotte

(stock photo)

6 apples, preferably Cortland or Rome
1/2 - 3/4 cup raisins
1/2 cup sweet white wine
2 Tbsp. marmalade
1/4 cup sugar
(approximately -depending on your sweet tooth)
1 Tbsp. unsalted butter
1 lemon or orange peel , cut into a few pieces

  1. Preheat oven to 350 degrees. & use the butter to coat the bottom of a baking dish. (I go up the sides too - just in case)
  2. Soak raisins in wine while you prepare everything else - try to allow them about 30 minutes. Core apples.
  3. Put apples in dish and stuff the aperture you made by coring with raisins. Do not discard any remaining wine from the soaking.
  4. Top raisins with a teaspoon of marmalade. (Although marmalade can be thick to deal with, especially if you use the kind with the peel, I don't bother heating up the marmalade to loosen. The baking will do that for you.
  5. Sprinkle the top of apple with the sugar.
  6. Place remaining wine in bottom of dish. If you don't have enough to cover the bottom, add the necessary amount needed to do so.
  7. Add peel of one lemon to bottom of dish.
  8. Bake for 30 minutes in your 350 degree oven.

I just bought 4 Rome apples to make my version of baked apples. Delighted to see another version of this, one of my favorite comfort foods!

Beautiful pictures. Now I have an instant craving for baked apples and instant memories of my mother making them for us on Thanksgiving Eve.

Thanks! Toni, I would love to hear about your version. E - I must admit, the apple picture - and the maple pork - not mine are not mine. I would be so excited if my camera phone took pics like that!

Just found this recipe. It makes me want to bake apples immediately! No apples, tho, so will have to visit the market today. Thanks for the inspiration!
